About the Gayo Coffee.

This coffee comes from Terry Farm, a farmer partnership program managed by PT. Jingki Roda Gayo. Located in the Gayo Highlands in Bener Meriah, Aceh, Indonesia, these farms thrive at altitudes between 1,300 and 1,600 meters above sea level. The fertile volcanic soil and cool tropical climate of the region provide ideal conditions for cultivating high-quality arabica coffee. The coffee plants are grown in shade, harvested by hand, and cared for using organic farming practices, including the use of organic compost derived from coffee waste.

Following harvest, the fresh coffee cherries are processed immediately. The first step involves selection using the flotation method (rimbang), where ripe red cherries are separated from unripe or defective ones by submerging them in water. This traditional yet effective technique ensures that only dense and perfectly ripe cherries advance to the next stage. All post-harvest activities are systematically coordinated and controlled to maintain freshness, stable moisture levels, and uniform grain quality.

The Gayo coffee region in Aceh, Indonesia, is recognized for producing some of the best arabica coffees in the world. Its history began in the early 20th century when the Dutch colonial administration introduced arabica plants to the Gayo Highlands around 1908. Currently, Gayo coffee is cultivated mainly in three districts: Central Aceh, Bener Meriah, and Gayo Lues. The combination of fertile volcanic soil, mountainous topography, cool temperatures, and constant rainfall creates a perfect terroir for high-quality arabica coffee. After the colonial era, smallholders continued the coffee tradition, adopting sustainable and shade-grown cultivation. For the Gayo people, coffee is the “livelihood of the community,” supporting practically every household and being deeply intertwined with their cultural identity.
